Egg
Sweet
Ingredients:
- 500
grs of sugar ;
- 3
dl of water ;
- 24
egg-yolks
Preparation:
Place
the sugar and water on the flame. Let it boil
until pearl-like drops are formed when the solution
is dripped from a spoon (32º on the appropriate
syrup-measuring device).
Take the solution off the stove, let it cool
off and then add the egg yolks.
Place the pan on the stove again to cook, stirring
continuously from side to side with a wooden
spoon.
Serve this egg sweet sprinkled with cinnamon.
