Salted Cod, Algarve Style
grs of dried, salted cod ;
grs of potatoes ;
dl of olive oil ;
grs of onions ;
cloves of garlic ;
grs of flour ;
bunch of parsley ;
the dried, salted cod into squares with about
5 cm sides. Soak in cold water for 24 hours
Remove the scales and bones and drain.
Place the olive oil in a separate deep pan and
put it on the flame. Let it warm up.
Cover the cod with flour and let it brown on
both sides. When it is brown, place it on a
Chop up the garlic and cut the onions
Fry the garlic and onions in the olive oil in
which the cod was fried.
In a separate pan, boil the potatoes in their
jackets in water and a little salt.
Peel the potatoes, cut them into large slices
and warm them in the olive oil.
Place them around the cod and serve.
If possible, use a 3 cm thick cod.
